Black Bean and Corn Salsa
Serves
Ingredients:
1 16 oz bag frozen corn, defrosted
1 15 oz can black beans, drained and rinsed
1 red bell pepper, chopped
½ red onion, finely chopped
2 tbsp red wine vinegar
1 tbsp olive oil
1 tsp salt
½ tsp pepper
Optional Ingredients:
3 tbsp chopped fresh cilantro
Finely chopped jalapeno to taste (de-seeded)
Instructions:
Combine all ingredients in a large bowl
