Roasted Sweet Potatoes

Super simple, super tasty. You can use the same recipe for any other type of potatoes also (baby, fingerling, red, etc.) or even butternut squash!
Ingredients:
2 medium sweet potatoes, peeled and chopped
1 tbsp avocado or olive oil
Salt and pepper to taste
Additional Seasoning Options:
½ tsp cinnamon
½ tsp chili powder
Instructions:
1. Preheat oven to 400 degrees.
2. Toss sweet potatoes in all remaining ingredients.
3. Spread on a baking sheet.
4. Bake for 30-45 minutes (depending on size of potato chunks), stirring and re-spreading halfway through.
