Roasted Carrots

Serves

Ingredients:

  • 1 lb carrots (either halved baby carrots or large chunks of whole carrots)

  • 1/2 tbsp avocado or olive oil

  • Salt and pepper to taste

Additional Seasoning Options:

  • Herb: ½ tsp thyme or rosemary

  • Spicy: ½ tsp chili powder + ½ tsp cinnamon

  • Sweet: ½ tbsp honey

  • Glazed: 1 ½ tbsp balsamic vinegar

  • Garlic: ½ tsp garlic powder

Instructions:

1.     Preheat oven to 400 degrees.

2.     Toss asparagus in oil, salt and pepper, and desired additional seasonings. Spread on a baking sheet.

3.     Cook for 25-30 minutes, stirring and re-spreading halfway through.
