Roasted Brussel Sprouts

These aren’t your grandma’s brussels sprouts, we promise.

Ingredients:

  • 1 lb brussels sprouts, cut into halves

  • ¼ cup red onion, coarsely chopped

  • 2 tbsp apple cider vinegar

  • 1 ½ tbsp avocado or olive oil

  • 1 tsp maple syrup or honey

  • 1 tsp mustard

  • Salt and pepper to taste

Instructions:

1.     Preheat oven to 400 degrees.

2.     Mix all ingredients except brussels sprouts and onions in a large bowl. Add brussels sprouts and onions and toss to coat.

3.     Spread on a baking sheet.

4.     Bake for 35-40 minutes, stirring and re-spreading halfway through.
